Vegan Apple Porridge

 

Porridge with Apples and Berries

Ingredients

For the Porridge

  • 50 g old fashioned Oats
  • 150 g water
  • 100 g coconut milk
  • 50 g Berries (frozen or fresh)
  • 2 Golden Apples (cored and peeled)
  • 1 tbsp agave syrup
  • 1 vanilla pod

For The Topping

  • 1 Golden Apple
  • hezelnuts
  • pistachio grains
  • agave syrup

Instructions

  1. Preheat the oven at 180°C.

    Halve the apple, brush with agave syrup and bake for 20 minutes or until tender. This is going to be part of the topping.

  2. Blend the two apples with the berries and the coconut milk. Pour the mixture in a small saucepan.

  3. Add in oats, water, 1 tbsp of agave and the vanilla pod. 

    Bring to boil, then cook the Porridge over low heat for 15 minutes, stirring often.

  4. Pour the Porridge into two bowls. Top with the baked apple halves. Add some more agave syrup and nuts, if desired.
